Ingredients
  

  • 2 cups cranberry beans fresh or dried, pre-soaked
  • 1/4 cup olive oil
  • 1 onion chopped
  • 1 carrot sliced
  • 2 medium tomatoes diced
  • 1 tbsp tomato paste
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1 cup water
  • Fresh parsley for garnish

Instructions
 

  • Heat olive oil in a large pot and sauté onions and carrots until softened.
  • Add diced tomatoes, tomato paste, and sugar, cooking for 5 minutes.
  • Stir in the cranberry beans, salt, and water. Cover and simmer over low heat for 30-40 minutes, or until the beans are tender and the sauce has thickened.
  • Let the dish cool to room temperature, then refrigerate for at least 1 hour before serving. Garnish with fresh parsley.
