
Keşkek (Wheat and Meat Mash)
Keşkek is a traditional Turkish dish made with slow-cooked wheat and tender meat, blended into a creamy consistency and garnished with butter and spices.
Ingredients
- 2 cups hulled wheat soaked overnight
- 500 g lamb or beef bone-in
- 4 cups water or broth
- 2 tbsp butter
- 1 tsp paprika
- Salt to taste
Instructions
- Cook the soaked wheat and meat in a large pot with water or broth over low heat for about 3 hours, stirring occasionally, until the wheat is soft and the meat falls off the bone.
- Remove the meat from the pot, shred it, and discard the bones.
- Mash the wheat mixture with a wooden spoon or blend lightly until creamy. Mix in the shredded meat and season with salt.
- Melt the butter in a small pan, stir in the paprika, and drizzle over the Keşkek.
- Serve hot, garnished with fresh parsley if desired.
