
Kuzu Tandır (Slow-Cooked Lamb)
Kuzu Tandır is a traditional Turkish dish where lamb is slow-cooked until tender and juicy, often served with pilaf and roasted vegetables for a complete meal.
Ingredients
- 1.5 kg lamb shank or shoulder
- 2 tbsp olive oil
- 4 garlic cloves sliced
- 1 onion sliced
- 1 carrot sliced
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
- 1 cup water or lamb stock
Instructions
- Preheat the oven to 160°C (320°F). Rub the lamb with olive oil, salt, and pepper.
- In a large ovenproof pot, heat a small amount of oil. Sear the lamb on all sides until golden brown. Remove and set aside.
- In the same pot, sauté onions, garlic, and carrots until soft. Add thyme, rosemary, and lamb stock. Place the lamb back into the pot.
- Cover the pot with a lid or foil and cook in the oven for 3 hours, basting occasionally, until the lamb is tender and falls off the bone.
- Serve hot with buttery pilaf and roasted vegetables.
