Ingredients
  

  • 2 medium potatoes peeled and cubed
  • 1 medium cauliflower cut into florets
  • 2 tbsp vegetable oil
  • 1 onion finely chopped
  • 2 garlic cloves minced
  • 1 tsp grated ginger
  • 2 tomatoes chopped
  • 1 tsp cumin seeds
  • 1 tsp turmeric
  • 1 tsp coriander powder
  • 1 tsp chili powder
  • Salt to taste
  • Fresh cilantro for garnish

Instructions
 

  • Heat oil in a large skillet over medium heat. Add cumin seeds and let them splutter.
  • Sauté onions, garlic, and ginger until golden. Add turmeric, coriander powder, and chili powder, cooking for a minute.
  • Stir in tomatoes and cook until they soften. Add potatoes and cauliflower, mixing to coat them in the spices.
  • Cover and cook on low heat for 15-20 minutes, stirring occasionally, until the vegetables are tender.
  • Garnish with fresh cilantro and serve hot with roti or rice.
