
Aloo Gobi (Potato and Cauliflower Curry)
A classic North Indian dish, Aloo Gobi combines tender potatoes and cauliflower florets cooked in a flavorful blend of spices.
Ingredients
- 2 medium potatoes peeled and cubed
- 1 medium cauliflower cut into florets
- 2 tbsp vegetable oil
- 1 onion finely chopped
- 2 garlic cloves minced
- 1 tsp grated ginger
- 2 tomatoes chopped
- 1 tsp cumin seeds
- 1 tsp turmeric
- 1 tsp coriander powder
- 1 tsp chili powder
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat oil in a large skillet over medium heat. Add cumin seeds and let them splutter.
- Sauté onions, garlic, and ginger until golden. Add turmeric, coriander powder, and chili powder, cooking for a minute.
- Stir in tomatoes and cook until they soften. Add potatoes and cauliflower, mixing to coat them in the spices.
- Cover and cook on low heat for 15-20 minutes, stirring occasionally, until the vegetables are tender.
- Garnish with fresh cilantro and serve hot with roti or rice.
