Rogan Josh (Spiced Meat Curry)

Ingredients
  

  • 500 g lamb or beef cubed
  • 3 tbsp vegetable oil or ghee
  • 2 onions finely chopped
  • 3 garlic cloves minced
  • 1 tsp ginger grated
  • 1 cup yogurt
  • 1 cup tomato puree
  • 1 tsp turmeric
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 2 tsp Kashmiri chili powder or paprika for milder heat
  • 1 tsp garam masala
  • 1/2 tsp ground cardamom
  • 2 cups water or stock
  • Salt to taste
  • Fresh cilantro for garnish

Instructions
 

  • Heat oil or ghee in a large pot over medium heat. Sauté onions until golden brown. Add garlic and ginger, cooking until fragrant.
  • Stir in turmeric, cumin, coriander, chili powder, and garam masala. Cook the spices for 1-2 minutes to release their aroma.
  • Add the cubed meat to the pot, stirring well to coat it with the spices. Cook for 5 minutes until browned.
  • Mix yogurt and tomato puree into the pot. Stir well and cook for 5 minutes.
  • Pour in water or stock. Bring to a simmer, cover, and cook on low heat for 45-60 minutes until the meat is tender.
  • Adjust seasoning with salt and sprinkle ground cardamom. Garnish with fresh cilantro and serve hot with naan or basmati rice.
