Ingredients
  

For the Broth (Base):

  • 6 cups chicken or pork stock
  • 1 tbsp sesame oil
  • 2 garlic cloves minced
  • 1- inch ginger grated

For Tonkotsu (Pork Broth):

  • 1/2 cup soy sauce
  • 1 tbsp mirin

For Shoyu (Soy Sauce Broth):

  • 1/3 cup soy sauce
  • 2 tbsp rice vinegar

For Miso (Fermented Soybean Broth):

  • 3 tbsp white miso paste
  • 1 tbsp soy sauce

For Toppings:

  • 400 g fresh ramen noodles
  • 200 g pork belly sliced and cooked
  • 4 soft-boiled eggs halved
  • Green onions sliced
  • Bamboo shoots optional
  • Nori seaweed sheets
  • Corn kernels optional

Instructions
 

Prepare the Broth:

  • Heat sesame oil in a large pot. Sauté garlic and ginger until fragrant. Add the stock and simmer for 30 minutes.

Flavor the Broth:

  • For Tonkotsu: Add soy sauce and mirin.
  • For Shoyu: Add soy sauce and rice vinegar.
  • For Miso: Whisk in miso paste and soy sauce until dissolved.

Cook the Noodles:

  • Boil ramen noodles in a separate pot according to package instructions. Drain and set aside.

Assemble the Ramen:

  • Divide the noodles among bowls. Ladle the hot broth over the noodles. Top with pork slices, halved eggs, green onions, bamboo shoots, nori, and optional toppings like corn.
  • Serve immediately while steaming hot.
