Minestrone Soup

Ingredients
  

  • 2 tbsp olive oil
  • 1 onion chopped
  • 2 garlic cloves minced
  • 2 carrots diced
  • 2 celery stalks diced
  • 1 zucchini diced
  • 1 cup canned kidney beans drained and rinsed
  • 1 cup canned crushed tomatoes
  • 4 cups vegetable broth
  • 1/2 cup small pasta e.g., ditalini or elbow
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and black pepper to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until fragrant.
  • Add carrots, celery, and zucchini. Cook for 5 minutes, stirring occasionally.
  • Stir in the beans, crushed tomatoes, vegetable broth, oregano, and basil. Bring to a boil.
  • Reduce heat to a simmer and cook for 15 minutes. Add pasta and continue cooking until the pasta is tender, about 10 minutes.
  • Season with salt and black pepper to taste. Serve hot.
