
Minestrone Soup
A classic Italian vegetable soup, Minestrone is hearty and nutritious, featuring seasonal vegetables, beans, and pasta in a rich tomato-based broth.
Ingredients
- 2 tbsp olive oil
- 1 onion chopped
- 2 garlic cloves minced
- 2 carrots diced
- 2 celery stalks diced
- 1 zucchini diced
- 1 cup canned kidney beans drained and rinsed
- 1 cup canned crushed tomatoes
- 4 cups vegetable broth
- 1/2 cup small pasta e.g., ditalini or elbow
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until fragrant.
- Add carrots, celery, and zucchini. Cook for 5 minutes, stirring occasionally.
- Stir in the beans, crushed tomatoes, vegetable broth, oregano, and basil. Bring to a boil.
- Reduce heat to a simmer and cook for 15 minutes. Add pasta and continue cooking until the pasta is tender, about 10 minutes.
- Season with salt and black pepper to taste. Serve hot.
