
Cottage Cheese and Cinnamon Sweet Pancakes

Ingredients
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp ground cinnamon
- 1 large egg
- 1 cup milk
- 1 tbsp sugar optional
- 1/2 cup cottage cheese
- 1 tsp vanilla extract
- 1 tbsp butter for frying
- Extra cinnamon for dusting
- Fresh berries for garnish optional
Instructions
- In a bowl, whisk together the flour, baking powder, salt, and cinnamon.
- In a separate bowl, whisk the egg, milk, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Stir in the cottage cheese and sugar (if using).
- Heat a non-stick skillet over medium heat and add a little butter to coat the surface.
- Pour spoonfuls of the pancake batter onto the skillet and cook for 2-3 minutes on each side until golden brown.
- Stack the pancakes and sprinkle with extra cinnamon. Garnish with fresh berries, if desired.
