Ingredients
  

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1 large egg
  • 1 cup milk
  • 1 tbsp sugar optional
  • 1/2 cup cottage cheese
  • 1 tsp vanilla extract
  • 1 tbsp butter for frying
  • Extra cinnamon for dusting
  • Fresh berries for garnish optional

Instructions
 

  • In a bowl, whisk together the flour, baking powder, salt, and cinnamon.
  • In a separate bowl, whisk the egg, milk, and vanilla extract.
  • Add the wet ingredients to the dry ingredients and mix until just combined.
  • Stir in the cottage cheese and sugar (if using).
  • Heat a non-stick skillet over medium heat and add a little butter to coat the surface.
  • Pour spoonfuls of the pancake batter onto the skillet and cook for 2-3 minutes on each side until golden brown.
  • Stack the pancakes and sprinkle with extra cinnamon. Garnish with fresh berries, if desired.
