
Baked Orange and Almond Cake
A light and fluffy cake with a beautiful blend of orange and almond flavors, perfect for a refreshing dessert.
Ingredients
- 1 1/2 cups almond flour
- 1/4 cup sugar or sugar substitute
- 1/2 tsp baking powder
- 1/4 tsp salt
- 3 large eggs
- 1/2 cup fresh orange juice
- Zest of 1 orange
- 1/4 cup melted coconut oil or butter
- 1/4 cup chopped almonds
- 1/4 cup orange slices for garnish
- Powdered sugar for dusting optional
Instructions
- Preheat the oven to 180°C (350°F). Grease and line an 8-inch round cake pan.
- In a large bowl, combine the almond flour, sugar, baking powder, and salt.
- In another bowl, whisk the eggs, orange juice, orange zest, and melted coconut oil or butter.
- Pour the wet ingredients into the dry ingredients and stir until well combined.
- Pour the batter into the prepared cake pan and smooth the top.
- Sprinkle the chopped almonds on top of the batter.
- Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
- Let the cake cool before garnishing with orange slices and a light dusting of powdered sugar (optional).
