Cocoa and Coconut Energy Balls

Ingredients
  

  • 1 cup rolled oats
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup shredded coconut plus extra for rolling
  • 1/4 cup peanut butter or almond butter
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • 1-2 tbsp almond milk or as needed

Instructions
 

  • In a bowl, combine the oats, cocoa powder, and shredded coconut.
  • Add the peanut butter (or almond butter), honey (or maple syrup), and vanilla extract to the dry ingredients.
  • Mix until the mixture comes together. If it’s too dry, add almond milk a tablespoon at a time until it reaches a dough-like consistency.
  • Roll the mixture into 12 small balls.
  • Roll each ball in the extra shredded coconut to coat.
  • Place the energy balls on a baking sheet and refrigerate for at least 30 minutes before serving.
