
Cocoa and Coconut Energy Balls
A healthy and energizing snack made with cocoa and coconut, perfect for a quick energy boost or a satisfying treat.
Ingredients
- 1 cup rolled oats
- 1/4 cup unsweetened cocoa powder
- 1/2 cup shredded coconut plus extra for rolling
- 1/4 cup peanut butter or almond butter
- 2 tbsp honey or maple syrup
- 1 tsp vanilla extract
- 1-2 tbsp almond milk or as needed
Instructions
- In a bowl, combine the oats, cocoa powder, and shredded coconut.
- Add the peanut butter (or almond butter), honey (or maple syrup), and vanilla extract to the dry ingredients.
- Mix until the mixture comes together. If it’s too dry, add almond milk a tablespoon at a time until it reaches a dough-like consistency.
- Roll the mixture into 12 small balls.
- Roll each ball in the extra shredded coconut to coat.
- Place the energy balls on a baking sheet and refrigerate for at least 30 minutes before serving.
