Ingredients
  

  • 4 large bell peppers tops cut off and seeds removed
  • 250 g ground beef or lamb
  • 1/2 cup cooked rice
  • 1/2 onion diced
  • 2 garlic cloves minced
  • 1/2 cup shredded cheese cheddar, mozzarella, or a mix
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp cumin
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Preheat the oven to 180°C (350°F).
  • In a skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, cooking until softened (about 5 minutes).
  • Add the ground meat to the skillet and cook until browned, breaking it apart with a spoon. Season with oregano, cumin, salt, and pepper.
  • Stir in the cooked rice and remove the skillet from heat.
  • Stuff the bell peppers with the meat and rice mixture, packing it tightly.
  • Place the stuffed peppers in a baking dish and top each with shredded cheese.
  • Cover with foil and bake for 25-30 minutes, until the peppers are tender and the cheese is melted and golden.
  • Garnish with fresh parsley and serve immediately.
