Ingredients
  

  • 2 medium eggplants sliced into 1/2-inch rounds
  • 1 cup tomato sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish optional

Instructions
 

  • Preheat the oven to 200°C (400°F).
  • Place the eggplant slices on a baking sheet and brush both sides with olive oil.
  • Season with salt, black pepper, oregano, and garlic powder.
  • Bake the eggplant slices for 15-20 minutes, flipping halfway through, until they are golden and tender.
  • Remove from the oven and spoon a little tomato sauce on top of each slice.
  • Sprinkle with mozzarella and Parmesan cheese, then return to the oven to bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  • Garnish with fresh basil or parsley if desired.
  • Serve hot as a main or side dish.
