
Baked Eggplant with Tomato Sauce and Cheese
A savory and comforting dish of baked eggplant slices topped with rich tomato sauce and melted cheese. Perfect as a main or side dish.
Ingredients
- 2 medium eggplants sliced into 1/2-inch rounds
- 1 cup tomato sauce
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- Fresh basil or parsley for garnish optional
Instructions
- Preheat the oven to 200°C (400°F).
- Place the eggplant slices on a baking sheet and brush both sides with olive oil.
- Season with salt, black pepper, oregano, and garlic powder.
- Bake the eggplant slices for 15-20 minutes, flipping halfway through, until they are golden and tender.
- Remove from the oven and spoon a little tomato sauce on top of each slice.
- Sprinkle with mozzarella and Parmesan cheese, then return to the oven to bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh basil or parsley if desired.
- Serve hot as a main or side dish.
