Ingredients
  

  • 2 medium beets peeled and thinly sliced
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • Fresh herbs such as parsley or thyme for garnish (optional)

Instructions
 

  • Preheat the oven to 200°C (400°F).
  • Place the beet slices on a baking sheet and drizzle with olive oil.
  • Sprinkle the cumin, paprika, garlic powder, salt, and black pepper over the beets, and toss to coat evenly.
  • Spread the beet slices in a single layer on the baking sheet.
  • Roast in the oven for 25-30 minutes, flipping halfway through, until the beets are golden and crispy.
  • Garnish with fresh herbs if desired and serve hot.
