
Spicy Lentil and Vegetable Stew
A flavorful and warming stew made with lentils, vegetables, and aromatic spices, perfect for a nourishing meal.
Ingredients
- 1 cup dried lentils rinsed
- 1 tbsp olive oil
- 1 onion chopped
- 2 garlic cloves minced
- 1 carrot diced
- 1 celery stalk diced
- 1 bell pepper chopped
- 1 zucchini chopped
- 1 can 400 g diced tomatoes
- 4 cups vegetable broth
- 1 tbsp curry powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper optional
- Salt and black pepper to taste
- Fresh cilantro for garnish optional
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion, garlic, carrot, celery, bell pepper, and zucchini, and sauté for 5-7 minutes until softened.
- Add the curry powder, cumin, paprika, cayenne pepper, salt, and black pepper, and cook for another 1-2 minutes to release the spices’ aroma.
- Stir in the diced tomatoes, vegetable broth, and lentils. Bring the mixture to a boil, then reduce the heat and simmer for 25-30 minutes, or until the lentils are tender and the stew has thickened.
- Taste and adjust the seasoning if necessary.
- Serve the stew hot, garnished with fresh cilantro if desired.
