Spicy Lentil and Vegetable Stew

Ingredients
  

  • 1 cup dried lentils rinsed
  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 garlic cloves minced
  • 1 carrot diced
  • 1 celery stalk diced
  • 1 bell pepper chopped
  • 1 zucchini chopped
  • 1 can 400 g diced tomatoes
  • 4 cups vegetable broth
  • 1 tbsp curry powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper optional
  • Salt and black pepper to taste
  • Fresh cilantro for garnish optional

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the chopped onion, garlic, carrot, celery, bell pepper, and zucchini, and sauté for 5-7 minutes until softened.
  • Add the curry powder, cumin, paprika, cayenne pepper, salt, and black pepper, and cook for another 1-2 minutes to release the spices’ aroma.
  • Stir in the diced tomatoes, vegetable broth, and lentils. Bring the mixture to a boil, then reduce the heat and simmer for 25-30 minutes, or until the lentils are tender and the stew has thickened.
  • Taste and adjust the seasoning if necessary.
  • Serve the stew hot, garnished with fresh cilantro if desired.
