Ingredients
  

  • 2 medium sweet potatoes peeled and cubed
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and black pepper to taste
  • 1 can 400 g black beans, drained and rinsed
  • 4 large flour tortillas
  • 1 avocado sliced
  • Fresh salsa
  • Lime wedges for serving

Instructions
 

  • Preheat the oven to 200°C (400°F).
  • Toss the sweet potato cubes with olive oil, chili powder, cumin, salt, and black pepper. Spread them in a single layer on a baking sheet and roast for 20-25 minutes, or until tender.
  • Warm the tortillas in the oven or on a skillet.
  • To assemble the burritos, add a scoop of roasted sweet potatoes, black beans, avocado slices, and fresh salsa to the center of each tortilla.
  • Roll up the tortillas tightly and serve with lime wedges on the side.
