Ingredients
  

  • 2 cups mushrooms sliced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder
  • Salt and black pepper to taste
  • 8 small corn tortillas
  • Fresh salsa
  • 1 avocado sliced
  • Fresh cilantro for garnish optional
  • Lime wedges for serving

Instructions
 

  • Preheat the oven to 200°C (400°F).
  • In a mixing bowl, toss the sliced mushrooms with olive oil, chili powder, cumin, paprika, garlic powder, salt, and black pepper.
  • Spread the seasoned mushrooms in a single layer on a baking sheet and bake for 15-20 minutes, or until tender and slightly crispy.
  • Warm the tortillas in the oven or on a skillet.
  • To assemble, fill each tortilla with the roasted mushrooms, fresh salsa, and avocado slices.
  • Garnish with fresh cilantro and serve with lime wedges on the side.
