Vegan Zucchini Fritters

Ingredients
  

  • 2 medium zucchinis grated
  • 1/2 cup chickpea flour
  • 1/4 cup nutritional yeast
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley chopped
  • 2 tbsp olive oil for frying

Instructions
 

  • Grate the zucchinis and squeeze out any excess moisture using a clean towel or cheesecloth.
  • In a large bowl, combine the grated zucchini, chickpea flour, nutritional yeast, garlic powder, onion powder, salt, black pepper, and chopped parsley.
  • Mix everything until well combined.
  • Heat olive oil in a frying pan over medium heat.
  • Scoop spoonfuls of the zucchini mixture into the pan and flatten with the back of the spoon to form fritters.
  • Fry for 2-3 minutes on each side or until golden and crispy.
  • Serve hot as a snack or side dish.
