
Shakshuka (Fried Vegetables and Tomato Sauce)
A flavorful and comforting dish made with fried vegetables, tomato sauce, and spices, perfect for serving as a side or light main dish.
Ingredients
- 2 medium eggplants cubed
- 1 zucchini sliced
- 1 red bell pepper chopped
- 1 onion chopped
- 2 tbsp olive oil
- 2 garlic cloves minced
- 2 cups canned crushed tomatoes
- 1 tsp paprika
- 1/2 tsp cumin
- 1/4 tsp black pepper
- Salt to taste
- Fresh parsley for garnish optional
Instructions
- In a large pan, heat the olive oil over medium heat. Add the cubed eggplant, zucchini, bell pepper, and onion, and sauté until softened and golden brown (about 10-12 minutes).
- Add the minced garlic and sauté for an additional 2 minutes.
- Add the crushed tomatoes, paprika, cumin, salt, and black pepper. Stir well and simmer for 10-15 minutes until the sauce thickens.
- Taste and adjust the seasoning if needed.
- Garnish with fresh parsley if desired.
- Serve hot as a side dish or light main course.
