
Vegetable Omelette Recipe

Ingredients
- 6 large eggs
- 1 red bell pepper (finely chopped)
- 1 green bell pepper (finely chopped)
- 1 small onion (finely chopped)
- 100 g mushrooms (sliced)
- Salt and pepper (to taste)
- 2 tablespoons olive oil or butter
Instructions
- Heat oil in a pan, add the chopped onion, peppers, and mushrooms. Sauté for 5 minutes over medium heat.
- In a bowl, whisk the eggs and add salt and pepper.
- Pour the egg mixture over the vegetables and cook for 5 minutes, covering the pan until the edges are set.
- Slice and serve warm.
