Ingredients
  

  • 6 large eggs
  • 1 red bell pepper (finely chopped)
  • 1 green bell pepper (finely chopped)
  • 1 small onion (finely chopped)
  • 100 g mushrooms (sliced)
  • Salt and pepper (to taste)
  • 2 tablespoons olive oil or butter

Instructions
 

  • Heat oil in a pan, add the chopped onion, peppers, and mushrooms. Sauté for 5 minutes over medium heat.
  • In a bowl, whisk the eggs and add salt and pepper.
  • Pour the egg mixture over the vegetables and cook for 5 minutes, covering the pan until the edges are set.
  • Slice and serve warm.
