Fava (Olive Oil Fava Bean Dip)

Ingredients
  

  • 2 cups cooked fava beans or canned
  • 3 tbsp olive oil
  • 1 small onion finely chopped
  • 1 garlic clove minced
  • 1 tbsp lemon juice
  • 1/2 tsp cumin
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh parsley chopped (for garnish)

Instructions
 

  • In a pan, heat 2 tablespoons of olive oil and sauté the chopped onion and minced garlic until softened.
  • Add the cooked fava beans, cumin, salt, and pepper. Stir to combine and cook for 5 minutes.
  • Remove from heat and let it cool slightly.
  • Transfer the mixture to a food processor and blend until smooth. If the dip is too thick, add a little more olive oil to achieve the desired consistency.
  • Taste and adjust seasoning if necessary.
  • Serve the fava in a bowl, garnished with fresh parsley and a drizzle of olive oil.
