Ingredients
  

  • 8 chicken thighs boneless, skin-on
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • For the Mustard Sauce:
  • 3 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 2 garlic cloves minced
  • 1 teaspoon fresh thyme or 1/2 teaspoon dried thyme

Instructions
 

  • Rub the chicken thighs with olive oil, salt, and black pepper.
  • Heat a skillet over medium heat and place the chicken thighs skin-side down. Cook for 6-7 minutes until the skin is golden brown. Flip and cook for another 5 minutes.
  • In a separate bowl, mix all the mustard sauce ingredients.
  • Remove the chicken from the skillet and pour the mustard sauce over it, ensuring the chicken is fully coated.
  • Heat the remaining sauce in the skillet to thicken and drizzle over the chicken before serving.
  • Serve with rice or fresh vegetables.
