Veggie-Packed Egg White Frittata

Ingredients
  

  • 6 egg whites
  • 1 cup spinach chopped
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red bell pepper diced
  • 1/4 cup finely chopped onion
  • 1/4 cup shredded low-fat cheese optional
  • 1 tablespoon olive oil
  • Salt and black pepper

Instructions
 

  • Preheat the oven to 180°C (350°F).
  • Heat olive oil in a medium oven-safe skillet and sauté the onion and red bell pepper for 2-3 minutes.
  • Add the spinach and cherry tomatoes, and sauté for another 1-2 minutes.
  • In a bowl, whisk the egg whites with salt and black pepper.
  • Pour the egg whites over the sautéed vegetables, spreading evenly.
  • Optionally, sprinkle with shredded cheese.
  • Transfer the skillet to the oven and bake for 15-20 minutes until the frittata is set and slightly golden.
  • Slice and serve warm.
