
Zucchini Spaghetti (Zoodles) with Pesto and Cherry Tomatoes
Light and flavorful zucchini noodles tossed with fresh pesto sauce and cherry tomatoes.
Ingredients
- 4 medium zucchinis spiralized into zoodles
- 1 cup fresh pesto sauce
- 1 cup cherry tomatoes halved
- 2 tablespoons olive oil
- 1 garlic clove minced
- 1/4 cup grated Parmesan cheese optional
- Salt and black pepper
Instructions
- Heat olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1 minute.
- Add the spiralized zucchini noodles and cook for 2-3 minutes until slightly softened. Season with salt and black pepper.
- Toss the zucchini noodles with pesto sauce until well coated.
- Add the cherry tomatoes on top and transfer to serving plates.
- Optionally, sprinkle with grated Parmesan cheese. Serve warm or at room temperature.
