Mediterranean Chickpea Salad

Ingredients
  

  • 2 cups cooked chickpeas
  • 1 cup cherry tomatoes halved
  • 1/2 cup cucumber diced
  • 1/4 cup finely chopped red onion
  • 1/4 cup black olives pitted and sliced
  • 2 tablespoons finely chopped fresh parsley
  • 1 tablespoon finely chopped fresh mint optional

Dressing

  • 3 tablespoons olive oil
  • 1.5 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • In a large salad bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, olives, parsley, and mint.
  • For the dressing, whisk together olive oil, lemon juice, Dijon mustard, salt, and black pepper.
  • Pour the dressing over the salad and toss gently.
  • Serve chilled.
