
Lemon Herb Salmon with Steamed Asparagus

Ingredients
- 4 salmon fillets
- 1 tablespoon olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 2 tablespoons finely chopped fresh herbs dill, parsley, thyme
- Salt and black pepper
- 1 bunch asparagus tough ends trimmed
Dressing
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- Salt and black pepper
Instructions
- Marinate the salmon fillets with olive oil, lemon juice, lemon zest, fresh herbs, salt, and black pepper, and let sit for 10 minutes.
- Steam the asparagus for 5-7 minutes until tender.
- Heat a skillet over medium heat and cook the marinated salmon fillets for 4-5 minutes on each side.
- For the dressing, whisk together olive oil, lemon juice, Dijon mustard, salt, and black pepper.
- Plate the salmon and asparagus, drizzle with the dressing, and serve warm.
