Ingredients
  

  • 4 salmon fillets
  • 1 tablespoon olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons finely chopped fresh herbs dill, parsley, thyme
  • Salt and black pepper
  • 1 bunch asparagus tough ends trimmed

Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and black pepper

Instructions
 

  • Marinate the salmon fillets with olive oil, lemon juice, lemon zest, fresh herbs, salt, and black pepper, and let sit for 10 minutes.
  • Steam the asparagus for 5-7 minutes until tender.
  • Heat a skillet over medium heat and cook the marinated salmon fillets for 4-5 minutes on each side.
  • For the dressing, whisk together olive oil, lemon juice, Dijon mustard, salt, and black pepper.
  • Plate the salmon and asparagus, drizzle with the dressing, and serve warm.
