
Spinach and Feta Stuffed Zucchini Boats
Light and delicious zucchini boats filled with fresh spinach and creamy feta cheese.
Ingredients
- 4 zucchinis halved lengthwise and scooped out
- 2 cups fresh spinach finely chopped
- 1 cup feta cheese crumbled
- 1 garlic clove grated
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and black pepper
- For topping: Grated mozzarella cheese optional
Instructions
- Preheat the oven to 200°C (400°F).
- Scoop out the insides of the zucchinis with a spoon, leaving the outer shell intact.
- Heat olive oil in a skillet. Add the chopped spinach and grated garlic, and sauté for 2-3 minutes.
- Transfer the sautéed spinach to a bowl. Mix in the feta cheese, oregano, salt, and black pepper.
- Stuff the zucchini halves with the mixture and place them on a baking tray.
- Optionally, sprinkle with grated mozzarella cheese.
- Bake for 20-25 minutes, until the zucchinis are tender and the tops are golden brown.
- Serve hot.
