
Creamy Cauliflower and Cheddar Soup
A rich and creamy soup made with cauliflower and sharp cheddar cheese.
Ingredients
- 1 medium cauliflower cut into florets
- 1 onion finely chopped
- 2 garlic cloves grated
- 2 tablespoons butter
- 3 cups vegetable stock
- 1 cup milk or cream
- 1.5 cups grated cheddar cheese
- 1 teaspoon Dijon mustard
- Salt and black pepper
- For garnish: Chopped green onions extra cheddar, and croutons
Instructions
- Melt the butter in a pot over medium heat. Add the onion and sauté for 3-4 minutes.
- Stir in the garlic and cook for another minute.
- Add the cauliflower florets and cook for a few minutes.
- Pour in the vegetable stock and bring to a boil. Reduce the heat and simmer for 20 minutes until the cauliflower is tender.
- Blend the soup until smooth using an immersion blender.
- Stir in the milk or cream, grated cheddar cheese, and Dijon mustard. Season with salt and black pepper.
- Serve hot in bowls, garnished with green onions, extra cheddar, and croutons.
