
Hearty Beef and Barley Soup
A nourishing soup with tender beef chunks and barley, perfect for a comforting meal.
Ingredients
- 300 g beef cut into cubes
- 1 tablespoon olive oil
- 1 onion chopped
- 2 garlic cloves grated
- 1 carrot chopped
- 1 celery stalk chopped
- 1 cup barley
- 6 cups beef broth or water
- 1 teaspoon thyme
- 1 teaspoon cumin
- Salt and black pepper
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot and brown the beef cubes for 8-10 minutes.
- Add the chopped onion and garlic, and sauté for another 3-4 minutes.
- Stir in the chopped carrot and celery, cooking for 5 more minutes.
- Add the barley, beef broth, and spices. Stir well and bring to a boil.
- Reduce heat and simmer for about 50 minutes, stirring occasionally, until the barley and beef are tender.
- Season with salt and black pepper. Serve hot in bowls, garnished with fresh parsley.
