
Classic French Onion Soup
A classic soup made with caramelized onions, flavorful broth, melted cheese, and toasted bread.
Ingredients
- 4 large yellow onions thinly sliced
- 3 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon flour
- 1/2 cup white wine optional
- 6 cups beef or vegetable broth
- 1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
- Salt and black pepper
For Topping
- 4 slices baguette toasted
- 1 cup grated Gruyère or Swiss cheese
Instructions
- Heat butter and olive oil in a large pot. Add the sliced onions and cook over low heat for 25-30 minutes until golden brown and caramelized.
- Stir in the flour and cook for 1 minute.
- Add the white wine and stir until evaporated.
- Pour in the broth, add thyme, salt, and black pepper, and bring to a boil. Simmer on low heat for 10-15 minutes.
- Divide the soup into oven-safe bowls. Place a toasted baguette slice on top and sprinkle with grated cheese.
- Broil in the oven at 200°C (400°F) for 5 minutes until the cheese is melted and bubbly.
- Serve hot.
