
Spicy Shrimp and Mango Salad

Ingredients
- 400 g shrimp peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon red pepper flakes
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1 large mango diced
- 2 cups chopped lettuce or arugula
- 1/2 cup diced cucumber
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro or parsley
- 1 avocado sliced
- 1/4 cup roasted cashews
For the Dressing
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1 teaspoon honey
- 1 teaspoon grated fresh ginger
- Pinch of salt and black pepper
Instructions
- Toss the shrimp with olive oil, red pepper flakes, cumin, and salt.
- Heat a skillet and cook the shrimp for 2-3 minutes on each side until pink and cooked through. Set aside to cool.
- In a large salad bowl, layer lettuce or arugula as the base.
- Top with mango, cucumber, red onion, avocado slices, and roasted cashews.
- Whisk together olive oil, lime juice, honey, ginger, salt, and black pepper for the dressing.
- Add the shrimp to the salad, drizzle with the dressing, and serve immediately.
