
Smoked Salmon and Arugula Salad
A light and delicious salad made with smoked salmon, fresh arugula, and citrus flavors.
Ingredients
- 200 g smoked salmon
- 4 cups fresh arugula
- 1 avocado sliced
- 1 cup cherry tomatoes halved
- 1/4 cup finely sliced red onion
- 1/2 cup cooked quinoa optional
- 1 tablespoon capers
For the Dressing
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- Salt and black pepper
Instructions
- Place the arugula in a large salad bowl.
- Add sliced avocado, cherry tomatoes, red onion, and cooked quinoa.
- Tear the smoked salmon into smaller pieces and place it over the salad.
- Sprinkle with capers.
- For the dressing, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and black pepper. Drizzle over the salad.
- Gently toss and serve immediately.
