Ingredients
  

  • 4 cups fresh spinach leaves
  • 1 large orange sliced
  • 1 grapefruit sliced
  • 1/2 cup toasted walnuts
  • 1/4 cup thinly sliced red onion
  • 1 tablespoon pumpkin seeds optional

For the Dressing

  • 3 tablespoons olive oil
  • 1 tablespoon honey
  • 2 tablespoons fresh orange juice
  • 1 tablespoon lemon juice
  • 1 teaspoon mustard
  • Salt and black pepper

Instructions
 

  • Place the spinach leaves in a large salad bowl.
  • Add the orange and grapefruit slices.
  • Sprinkle in the toasted walnuts and thinly sliced red onion.
  • For the dressing, whisk together olive oil, honey, orange juice, lemon juice, mustard, salt, and black pepper in a small bowl.
  • Drizzle the dressing over the salad and gently toss to combine.
  • Garnish with pumpkin seeds and serve immediately.
