
Egg Salad & Watercress Sandwich on Whole Grain Bread

Ingredients
- 8 slices whole grain bread
- 4 hard-boiled eggs
- 1/4 cup light mayonnaise
- 1 teaspoon Dijon mustard
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup fresh watercress leaves
Instructions
- Peel and dice the hard-boiled eggs into small cubes.
- In a bowl, mix the eggs with light mayonnaise, Dijon mustard, lemon juice, salt, and black pepper to create a creamy egg salad.
- Spread the egg salad evenly over half the slices of bread.
- Top with fresh watercress leaves and close the sandwiches with the remaining slices of bread.
- Cut the sandwiches diagonally and serve immediately.
