Ingredients
  

  • 8 slices whole grain bread
  • 4 hard-boiled eggs
  • 1/4 cup light mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup fresh watercress leaves

Instructions
 

  • Peel and dice the hard-boiled eggs into small cubes.
  • In a bowl, mix the eggs with light mayonnaise, Dijon mustard, lemon juice, salt, and black pepper to create a creamy egg salad.
  • Spread the egg salad evenly over half the slices of bread.
  • Top with fresh watercress leaves and close the sandwiches with the remaining slices of bread.
  • Cut the sandwiches diagonally and serve immediately.
