Vegan Falafel & Tzatziki Wrap

Ingredients
  

  • 4 whole wheat tortillas
  • 12 small vegan falafels store-bought or homemade
  • 1 cup shredded carrots
  • 1 cup thinly sliced red cabbage
  • 1/2 cup diced cucumber
  • 1 cup lettuce or spinach leaves
  • 1 tablespoon olive oil

For the Vegan Tzatziki Sauce

  • 1 cup vegan yogurt
  • 1 small cucumber grated and drained
  • 1 tablespoon lemon juice
  • 1 teaspoon olive oil
  • 1 clove garlic grated
  • 1 teaspoon dried mint
  • Salt and black pepper

Instructions
 

  • Prepare the vegan tzatziki sauce by mixing all the ingredients in a bowl until smooth.
  • Spread the vegan tzatziki sauce evenly over the tortillas.
  • Divide the shredded carrots, red cabbage, diced cucumber, and lettuce among the tortillas.
  • Add vegan falafels on top of the vegetables.
  • Wrap tightly and cut in half.
  • Serve warm or at room temperature.
