
Vegan Falafel & Tzatziki Wrap
A flavorful and filling wrap made with homemade vegan falafel, fresh vegetables, and vegan tzatziki sauce.
Ingredients
- 4 whole wheat tortillas
- 12 small vegan falafels store-bought or homemade
- 1 cup shredded carrots
- 1 cup thinly sliced red cabbage
- 1/2 cup diced cucumber
- 1 cup lettuce or spinach leaves
- 1 tablespoon olive oil
For the Vegan Tzatziki Sauce
- 1 cup vegan yogurt
- 1 small cucumber grated and drained
- 1 tablespoon lemon juice
- 1 teaspoon olive oil
- 1 clove garlic grated
- 1 teaspoon dried mint
- Salt and black pepper
Instructions
- Prepare the vegan tzatziki sauce by mixing all the ingredients in a bowl until smooth.
- Spread the vegan tzatziki sauce evenly over the tortillas.
- Divide the shredded carrots, red cabbage, diced cucumber, and lettuce among the tortillas.
- Add vegan falafels on top of the vegetables.
- Wrap tightly and cut in half.
- Serve warm or at room temperature.
