Pulled Pork BBQ Sandwich with Coleslaw

A hearty sandwich made with tender barbecue pulled pork and crunchy, fresh coleslaw.

Ingredients
  

  • 500 g pork shoulder for pulled pork
  • 1 cup barbecue sauce
  • 4 sandwich buns brioche or hamburger buns recommended
  • 1 tablespoon olive oil
  • Salt and black pepper

For the coleslaw

  • 2 cups shredded cabbage
  • 1 cup shredded carrots
  • 1/2 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • Salt and black pepper

Instructions
 

  • Rub the pork with salt, black pepper, and olive oil, then place it in a slow cooker. Pour 1/2 cup of barbecue sauce over the pork and cook on low for 6-8 hours.
  • Once tender, shred the pork with a fork and mix it with the remaining barbecue sauce.
  • For the coleslaw, combine all the ingredients in a bowl and mix until evenly coated.
  • Slice the sandwich buns and layer the bottom half with the pulled pork mixture.
  • Top with a generous portion of coleslaw and close with the top bun.
  • Serve warm or at room temperature.
