
Pulled Pork BBQ Sandwich with Coleslaw
A hearty sandwich made with tender barbecue pulled pork and crunchy, fresh coleslaw.
Ingredients
- 500 g pork shoulder for pulled pork
- 1 cup barbecue sauce
- 4 sandwich buns brioche or hamburger buns recommended
- 1 tablespoon olive oil
- Salt and black pepper
For the coleslaw
- 2 cups shredded cabbage
- 1 cup shredded carrots
- 1/2 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 teaspoon sugar
- Salt and black pepper
Instructions
- Rub the pork with salt, black pepper, and olive oil, then place it in a slow cooker. Pour 1/2 cup of barbecue sauce over the pork and cook on low for 6-8 hours.
- Once tender, shred the pork with a fork and mix it with the remaining barbecue sauce.
- For the coleslaw, combine all the ingredients in a bowl and mix until evenly coated.
- Slice the sandwich buns and layer the bottom half with the pulled pork mixture.
- Top with a generous portion of coleslaw and close with the top bun.
- Serve warm or at room temperature.
